One of my favorite desserts is a simple dish of peppermint ice cream smothered in hot fudge sauce. It was a very popular dessert during the holidays at Rocky Fork Hunt & Country Club, where I worked for many years. I decided to do a spin off that dessert with our chocolate chip cookies (glazed with a healthy shmear of melted dark chocolate) book-ending a nice big scoop of semi-homemade peppermint ice cream! It’s soooooo good! While it takes a little longer to prepare this one initially- it’s a complete do-ahead dessert that will create big smiles! If you really want to make an impression, wrap each cookie sandwich in white freezer paper and tie it with a ribbon as a sweet edible present for your Sweeties!
Ingredients for 2 sandwiches- 4 Éban’s Chocolate Chip Cookies, unwrapped
- 2 oz Bittersweet or Dark Chocolate
- 1 pint Peppermint Ice Cream (if you can’t find pre-made, see the note below to make your own)
- 2 Candy Canes, crushed
- 1 Tbsp Red Decorating Sugar (optional)
Preparation
- Melt the chocolate in a double boiler (or in a microwave being careful not to scorch it).
- Turn the cookies with the flat side up onto a piece of parchment paper and spread each cookie with about a tablespoon of the melted chocolate, smoothing it out to the edge of the cookies. Let the cookies sit at room temperature until the chocolate sets.
- When the chocolate is set, place a large scoop of ice cream in the center of two cookies then gently but quickly place the other cookie (chocolate side in) on top of the ice cream.
- Place both ice cream cookie sandwiches on a small plate or tray and set in the freezer for several hours until the ice cream is firm.
- When the ice cream is set, quickly roll the edges of the cookie sandwich in the crushed candy canes mixed with the red decorating sugar.
- Place one sandwich in the center of a square of white freezer paper and wrap it tightly, securing the package with a piece of ribbon or twine. Repeat for the other sandwich.
- Keep the ice cream cookie sandwiches in the freezer until ready to serve. They can be made a week in advance.
